Dirkosh sind sonnengetrocknete Injera-Chips. Injera gehört zu den traditionellsten äthiopischen Gerichten, ein kreppartiges Gebäck, das aus Teffkorn hergestellt wird. Während Injera mit Gemüse serviert wird, wird Dirkosh typischerweise in Soßen geschmort oder gekocht, um "Firfir"-Gerichte zuzubereiten, oder als Snack gegessen. Es kann auch gedämpft werden, um es zu frischem Injera zu verarbeiten und in würzige Eintöpfe zu integrieren.
